Avocado, Turkey and Cheese Sandwich with Peanut Butter and Cranberry Sauce

Ever wonder what to do with your leftover Turkey? Some people make a Turkey Pie, while others make a Turkey Lasagna or Turkey Soup. But all these dishes require quite a great deal of preparation, cooking and washing. No doubt they feed your stomachs to the brim and leave you satisfied, but why not go for something that is easy, simple to make and still delicious all the same time? This Avocado, Turkey and Cheese Sandwich features the most humble ingredients in between 2 pieces of perfectly toasted bread. To jazz things up a little, I decided to use Skippy’s Crunchy Peanut Butter in place of the gravy to provide that same nutty flavor and crunch element.
 Call me crazy with this combination of ingredients. But what you finally get is a sandwich that is both sweet and salty, creamy and crunchy all at the same time. It is a sandwich that is unique and unlike your standard Turkey Sandwich.
 This Christmas and boxing day and many days after, why not opt for something simpler, but nevertheless still scrumptious, and spend more time with your family and friends with the minimal cooking and washing! 🙂

Avocado, Turkey and Cheese Sandwich with Peanut Butter and Cranberry sauce
Makes 1 Serving
2 slices of Bread, toasted
1 slice of Cheddar Cheese
½ ripe Avocados
Salt and Pepper
100g Turkey, shredded or sliced to your liking
Crunchy Peanut Butter
Cranberry Sauce
2 leaves of Lettuce
In a small bowl, mash the Avocado and season with salt and pepper.
Top 1 slice of bread with cheese and place under a broiler to melt the cheese.
On the other slice of bread, spread the avocado and layer the turkey. Add a dollop of your favorite Crunchy Peanut Butter and cranberry sauce (about a tablespoon each) and spread. Place the lettuce leaves on top of the turkey.
Combine both slices of bread, slice in half, and serve.
