Hey guys! We apologise for the utter lack of posts in the past week. Rest assure, we’re not MIA, but we’ve been very busy with math and it is driving us completely insane. Why can’t we count nice stuff like cookies and muffins instead of cards and dice in math questions? October is the month of examinations in Singapore, and we know that many of you out there are also having your exams/prelims, and are probably studying your heart out. So we want to wish you the best of luck! If you’re feeling stressed (like we are), here’s a yummy recipe that is sure to tingle your tastebuds and help relieve some of that stress you’re feeling! We attempted this recipe a while back, together with the Carrot Cake Cupcakes with Cream Cheese Frosting and Chocolate Banana Cupcakes with Chocolate Ganache Frosting, and haven’t gotten a chance to post it, so here it is! Also, do you know that blueberries are known to improve cognitive ability and eating them will prime your brain for your exams so that you will be sure to ace your papers? We hope you enjoy it as much as we did 🙂
Blueberry Cinnamon Streusel Muffins
Adapted from All Recipes
Yields 12 regular sized muffins
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed (at room temperature)
1 1/2 teaspoons ground cinnamon (feel free to add as much as you want!)
Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
Do not press the crumb topping into the batter after sprinkling but rather just sprinkle lightly over the top, or else the topping will sink into the batter when baking.
Bake for 20 to 25 minutes in the preheated oven, or until done (golden brown).
We were extremely pleased with the outcome of this recipe as the muffins smelled, looked and tasted great! The Cinnamon Streusel topping gave the muffins an extra kick of sweetness and crunch. Who says you can’t have a crumble and a muffin at the same time? 🙂 High quality Starbucks knock-off, but better in the sense that you actually know what goes into your muffin (perfect for all you weight-conscious people) and you can have so much fun baking it and watching the blueberries burst while baking and get all gooey and purpley!
