Ice Cream Chocolate Chip Cookies

So remember I made these Hardboiled Egg Chocolate Chip Cookies that turned out surprisingly amazing, well these Ice Cream Chocolate Chip Cookies turned out a tad bit disappointing for me :( But then again, Chocolate Chip Cookies are a personal thing. For me, I like mine to have a crispy exterior and maybe slightly chewy interior. These cookies however, turned out pretty soft and it probably has something to do with the ice cream because when I made Ice Cream Brownies, they turned out to have a pretty much similar texture as well.
But some of my friends loved it.

Like the Hardboiled Egg Chocolate Chip Cookies, these had a distinct texture. It had a soft exterior, almost cake-ish like, but the inside was slightly chewy. Also, the batter didn’t really spread while baking unlike a regular cookie dough, which probably explains why the inside was still soft and chewy. I also thought that the addition of ice cream would make it too sweet, but the taste turned out pretty alright. I used chocolate ice cream to accentuate the chocolate flavour but I didn’t actually get more chocolate flavour than I would with a regular chocolate chip cookie. So I’m pretty sure you can use just any flavour you like. Maybe the taste will change accordingly, or maybe it won’t. Either way, it’s fun to experiment and play a little :)

Ice Cream Chocolate Chip Cookies
Adapted from Picky Palate
2 sticks softened butter
1 Cup granulated sugar
3/4 Cup packed brown sugar
2 large eggs
1 1/2 Tablespoons pure vanilla
Heaping 1/2 Cup chocolate ice cream (frozen from container)
4 Cups all purpose flour
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
1 bag chocolate chips
Preheat oven to 350 degrees F.  In a stand or electric mixer, cream the butter and sugars until fluffy.  Add in eggs and vanilla until well combined.  Add in ice cream until combined.
Place flour, baking soda and salt into a large bowl; mix.  Add to wet ingredients along with the chocolate chips; mix until just combined.
With a medium cookie scoop, scoop dough onto a silpat or parchment lined baking sheet.  Bake for 9-11 minutes or until cookies are cooked through.  Let cool for 5 minutes on baking sheet before transferring to a cooling rack.
